Zucchini casserole

Here's a simple zucchini casserole recipe you can try:

Ingredients:

  • 4 medium zucchinis, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup breadcrumbs (panko works well)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)
  • Olive oil

Instructions:

  1. Preheat the oven to 350°F (175°C).

  2. Sauté the onions and garlic: In a skillet, heat a bit of olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent.

  3. Prepare the zucchini: In a large bowl, combine the sliced zucchini, sautéed onions and garlic, salt, pepper, and oregano (if using).

  4. Mix the wet ingredients: In another bowl, whisk together the eggs and milk.

  5. Combine: Add the egg mixture to the zucchini mixture, stirring until well combined. Then fold in half of the shredded cheese.

  6. Layer in a baking dish: Grease a 9x13-inch baking dish and pour the zucchini mixture in. Top with the remaining cheese and breadcrumbs.

  7. Bake: Bake for about 35-40 minutes, or until the top is golden brown and the zucchini is tender.

  8. Serve: Let it cool for a few minutes before slicing. Enjoy!
